Ingredients for making manioc broth for 100 people:

 4 kg of peeled and chopped cassava

 8 chopped onions

 1 head of garlic or 8 cloves of garlic

 1 kilogram of desalted dried meat

 ½ kilogram of pepperoni sausage

 4 meat broth tablets (optional)

 2½ liters of water

 oil

 salt

How to make manioc broth for 100 people:

Heat a large saucepan over medium heat and add oil to cover the entire bottom in a thin layer. Add the onions, garlic and pepperoni, all finely chopped, and let it fry until it starts to brown.

Tip: This recipe can be prepared in a common pot or in a pressure cooker. If you don't have a pot big enough to cook all these ingredients, divide them between two pots and cook the same way.

Add the cassava and water and, if you like, add the meat broth tablets as well. Cover and leave the pan on the fire until the cassava is cooked and very soft, melting.

Tip: Beef broth tablets are an optional ingredient but will add more flavor to this broth. The water should cover the cassava, so if the indicated amount of water is not enough, add a little more water.

If the cassava is very tender, it will dissolve naturally in the broth. However, if you prefer, you can blend the cassavas in a blender and return them to the pan. Add the dry meat and let it cook for another 5-10 minutes, to get the taste and get a more consistent broth.
